Gonzalez Byass VORS Palo Cortado

Palo Cortado is the most loosely defined style of sherry. Producers send their wines off to the sherry decision-making bureau for tasting and if they think it smells and tastes like a Palo Cortado (literally meaning: “broken stick”) then the wine can be labelled and sold as such. This particular Palo is magnificent. It has spent at least 30 years in a solera and contains approximately 13% PX (equally as old). The addition of this sweeter wine imparts a little bit of fruit and adds extra depth and complexity to the wine. It is a symphony of dried fruit and nut, burnt toffee, leather and smoke characteristics.
