La Freixeneda Cabernet Garnacha

This wine is named after Freixenet’s family estate in Sant Sadurni D’Anoia. It is a wine that is a fusion of ancient and modern wine-making techniques. Hand-harvested Grenache (Garnacha) and Cabernet Sauvignon are brought to the winery in very small crates and kept very cold for two days in order to heighten their preliminary aromas. Then some of the Garnacha undergoes the old Spanish technique of doble pasta whereby some fermenting juice is run off and replaced with more crushed grapes. This produces wines of greater colour and concentration. Meanwhile some of the Cabernet Sauvignon is dried in a cold chamber, concentrating the flavours by evaporation of water present in the grape before crushing. The wines are then blended and aged for up to 20 months in 1200 l. Slavonian oak barrels. After this period of maturation the wine is considered at its peak and bottles are sealed with a hermetic glass closure to avoid further ageing in bottle. Unique.
