Ridgeback Cabernet Franc Paarl
The wine estate is named after the Rhodesian Ridgeback breed of dog originating from Southern Africa. Legends and stories are synonymous with this particularly brave and rugged pooch. The pedigree, character and stature of this impressive animal are reflected in the full-bodied nature of their reds.
The wine is a 100% expression of Cabernet Franc, originally a variety from Western France where, in the Loire Valley, it can produce very light and easy reds or in Bordeaux is a blending partner to add acidity and freshness to Cabernet Sauvignon and Merlot. In the New World, Cabernet Franc is a very different beast. This example, shows lots more structure, depth and concentration to it’s French relations. The wine was matured for 15 Months in 42% new French oak, with the remainder in 2nd and 3rd use French oak. This provides good body, tannins and complexity to a base wine which is full of blackcurrant, green peppercorns and black olive flavours.
