Eaux De Vie
Eau de Vie stands for “water of life” and the distilled spirit of the same name is a colourless, brandy made from any variety of fruit other than grapes. Technically speaking, any distilled spirit is an Eau de Vie but in practice this is usually restricted to clear, fruit brandies or “white alcohols”. All brandies start as Eau de Vie before being aged in oak.
Most Eaux de Vie are bottled immediately after double distillation without resting or ageing. Fruit is either crushed and fermented or macerated in spirit before distillation. This spirit is made from a wide variety of fruits, commonly orchard fruits, such as cherries, apples, pears and plums or berry fruits but it’s generally possible to make Eau de Vie from pretty much any thing.
What to expect
Eau de Vie is usually bottled at strengths of 30-50% ABV. A decent quality spirit of this kind will carry the distinct aroma of the fruit from which it is made and create a rich explosion of flavour on the palate that tapers into a smooth finish without leaving any unpleasant burning sensation.
Did you know?
There is also a spirit known as an Eau de Vie de Vin, made from grapes and otherwise known as Grappa. Grappa is often classified as an Eau de Vie and a brandy as some Grappa is oak aged and others are not.
